Chicken With a Mustard Crust

  • Mix the mustard with the breadcrumbs, shallot, butter, lemon zest and parsley. Season and spread onto one side of the chicken thighs.
  • Heat a tablespoon of olive oil in an ovenproof frying pan and put the thighs in crust-side up.
  • Fry for 5 minutes then add the wine, broth and some seasoning and cover, then cook over a low heat for another 5 minutes or until chicken is cooked through.
  • Meanwhile cook the fettucini following the pack instructions.
  • Take the lid off the pan and put it under a hot broiler for 5 minutes or until the crust is browned and bubbling and the chicken is cooked through.
  • At this point, remove the chicken and keep warm whilst reducing the sauce to the desired consistency (stir in some cream or creme fraiche if you want once removed from the heat).
  • Serve the chicken with the fettucini, a squeeze of lemon and the sauce.

  1. Ok so a bit confusing, sounded easy enough but I had a few problems, I have been a bit brain dead lately so could just be me, please let me know. I had a hard time with the crust should it coat the whole piece of chicken or just one side? What temp do you cook on after you add the wine? It said to reduce sauce but I had very little left after five minutes so I had to deglaze pand with chicken stock and additional wine then thicken like a gravy before I added the cream. Then end result was good but I am sure not the intended one. Message to the author: please let me know what I did wrong because the flavors sound great and I am positive it would be wonderful if I could figure it out......
