  1. Using 1/2 the oil, brown the chicken on medium heat till cooked, then transfer to a plate.
  2. Add the extra oil if needed. Fry onions, garlic, lime rind, cumin, oregano, salt and pepper over medium heat until onion is softened, approx 4 minute.
  3. Add Chicken stock and lime juice, stir well, bring to a boil scraping all the brown bits. Return the chicken and any juices to the pan, cover and simmer until the juice runs clear when the chicken is pierced (15 min or so).
  4. Whisk cornstarch in a bowl with 2 tsp of water, then add the liquid around the chicken and simmer till thickened, about 2 minute.
