- 4 chicken cutlets, about 1/2-inch thick
- 3 tablespoons extra virgin olive oil
- 3 large avocados, halved, pitted, peeled, and chopped
- 1 large tomatoes, chopped
- 1 medium red onion, cut in thin strips
- 1 jalapeno pepper, seeded and sliced
- 3 tablespoons lime juice
- 1⁄4 cup packed fresh cilantro leaves

directions
- Preheat a grill pan over high heat. Coat chicken with 2 tablespoons olive oil and sprinkle generously with salt and pepper. Add to grill pan; cook 2-3 minutes each side or until no pink remains.
- Meanwhile, in large bowl combine avocados, tomato, onion, jalapeno, lime juice, and remaining 1 tablespoon olive oil. Season to taste with salt and pepper. Serve with chicken. Garnish with cilantro and lime wedges.
