  • Create the marinade by mixing the garlic, oregano, vinegar, olive oil, olives, prunes, capers and bay leaves. In a large bowl pour marinade over the chicken and let it sit in the refrigerator overnight.
  • Preheat oven to 350. Lay chicken in a single layer in an ovenproof pan. Spoon marinade on top of chicken. Pour white wine on top and sprinkle with brown sugar and coriander. Bake for one hour.
