Directions

  1. Cook the rice according to the directions on the package.
  2. While the rice is cooking, in a large skillet heat the oil over medium high heat.
  3. Saute the pepper and onions until softened.
  4. Add the chicken and cook, stirring until browned.
  5. Add the tomatoes, peas, and garlic.
  6. Simmer until everything is heated through and the chicken is cooked.
  7. Add the cooked rice to the fry pan, mix well and serve.
