  • Coat chicken with mixture of flour, salt, and pepper, reserve 2 T of flour mixture.
  • Heat butter in large skillet.
  • Brown chicken on both sides,turning often, about 12 minutes, until chicken tests done.
  • Remove chicken and keep warm.
  • To skillet, add onion and garlic, saute 1 minute.
  • Add reserved flour mixture, cook and stir 1 minute.
  • Add milk, cook and stir until milk boils.
  • Add shrimp, cheese, parsley and pepper flakes.
  • Simmer for 3 minutes.
  • Place chicken on plate, spoon scampi over the chicken.

  1. I usually don't use recipes but this is a great simple one & you can use the butter/milk mixture as a basic cream sauce for many recipes or a gravy base.
     
  2. Delicious! I tried to make it a little healthier by using olive oil instead of butter and 2% milk and it still tasted very good. I'll definitely make this again!
     
  3. Mmmmmm, this was excellent! I had been craving scampi and found this recipe to be so easy to put together. I didn't add shrimp as I forgot to thaw it sooner! However, it was still delicious with just chicken. I bet its going to be just as tasty as leftovers!
     
  4. This was VERY DELICIOUS!! DH was on cloud nine :) I diced up the chicken into bite size pieces and used half milk and half whipping cream for a richer flavor. We will have this again! Thanks for sharing the recipe!
     
  5. This was really great. Everyone enjoyed the scampi. I did cut up the chicken into bite size pieces and sauted in the butter along with olive oil. Added about 1 tablespoon of fresh lemon juice at the end. Served with white rice and peas. Thanks for sharing.

Tweaks

  1. I would recommend doubling the flour & using the extra flour mixed in with the milk mixture (mix it in a seperate cup/mug before adding to milk to prevent lumps), if you prefer a thicker cream sauce. Next time I'll probably add sliced mushrooms to the onion/garlic saute. You could also use shallots instead of regular onion. Lots of things you could tweak & add to this basic recipe. I also added an addtl tbsp butter after cooking the chicken. It saute the onion/garlic butter.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
