Chicken With White Beans and Baby Spinach

- 1 lb chicken breast, boneless, skinless
- 1⁄2 teaspoon dried thyme leaves
- 1⁄8 teaspoon fresh ground pepper, more to taste
- 1 1⁄2 tablespoons butter, no transfat spread like Promise
- 1 medium onion, chopped fine
- 3 garlic cloves, minced
- 1 1⁄2 cups chicken broth, low-fat, low sodium
- 1⁄4 cup dry white wine
- 1 (16 ounce) can cannellini beans, rinsed and drained
- 1 (10 ounce) bag Baby Spinach
directions
- Cut chicken breasts into strips and season with thyme and black pepper.
- Melt 1 tablespoons butter in skillet over medium high heat.
- Add chicken to the butter and brown over medium high heat about 3 - 4 minutes.
- Move chicken to side and add 1/2 tablespoons of butter. Add minced garlic and onion (note I use onion powder only because my DH can't eat real onions - I know how awful to not cook with real onions).
- Saute 1 minute and then add broth and white wine. I used Pinot Grigio because that's what I had on hand.
- Bring to a boil and reduce heat - simmer 5 minutes.
- Stir in beans which have been rinsed and drained and the spinach leaves.
- Simmer 5 more minutes until chicken cooked through.
