Chicken With White Beans and Baby Spinach

"I found this recipe in Readers Digest in an ad for Promise butter. I tweaked it to fit my DH and my tastes and it came out quite good. It's a great low fat, healthy dish which is really more like soup and is great on a cold winter night. It's also real quick to make after coming home from working all day. Putting it here on Zaar so I can find it again."

  • Cut chicken breasts into strips and season with thyme and black pepper.
  • Melt 1 tablespoons butter in skillet over medium high heat.
  • Add chicken to the butter and brown over medium high heat about 3 - 4 minutes.
  • Move chicken to side and add 1/2 tablespoons of butter. Add minced garlic and onion (note I use onion powder only because my DH can't eat real onions - I know how awful to not cook with real onions).
  • Saute 1 minute and then add broth and white wine. I used Pinot Grigio because that's what I had on hand.
  • Bring to a boil and reduce heat - simmer 5 minutes.
  • Stir in beans which have been rinsed and drained and the spinach leaves.
  • Simmer 5 more minutes until chicken cooked through.

I grew up and still live in the suburbs of Chicago, IL. My husband and I are empty nesters I work full time in computer consulting and so don't have much time for cooking, but I do enjoy it and like scanning through the recipes here for new ones to try. I'm fairly new to this site, but have already tried a number of recipes - so far, so good! My husband is a chocoholic, so I especially look for recipes that contain chocolate
