Chickie Chippie Casserole

  • In a small saucepan melt butter and whisk in flour.
  • Slowly add chicken stock and milk, stirring constantly.
  • Add salt, pepper, poultry seasoning, and sage.
  • When mixture begins to thicken, remove from heat and set aside to cool.
  • Once cooled, combine mixture with yogurt, mustard, cayenne, and Worcestershire sauce.
  • In a 9x13 casserole layer potato chips, chicken, vegetables, eggs, cheese and then the combined mixture. Repeat layer pattern twice and top with remaining chips.
  • Bake at 350 degrees for 30 minutes, allow to rest 10 minutes prior to serving.

  1. this was pretty good, but next time I would make a couple of adjustments for our family. I would decrease the cayanne to about 1/2 tsp. I did like the potato chips but might try corn chips. I liked the eggs and green pepper...those made the dish different...
     
  2. I would have given this four stars personally but my husband tried it and then wouldn't finish it. He said there was way too much going on in the casserole. The taste of mustard was overpowering for me and the eggs seemed out of place. I finished my plate, I didn't think it was bad at all! Definitely one to try!
