Chilean White Peach Sangria

"White peaches are popular in Chile and are used in the sangria served there. Make sure to allow the peaches to soak well before serving. You can, of course, use regular peaches if you prefer. Cooking time is the time it's sitting on the counter steeping."

  • Peel, pit and finely dice peaches.
  • Put peaches, raspberries (if using), wine and Cointreau in pitcher and let sit at room temperature for 1-2 hours.
  • Just before serving add sparkling water.
  • Serve over ice with mint garnish.

<p>I&nbsp;live in Seattle, but have also lived in the DC area, the Mid-west, California,&nbsp;the South, and New England,&nbsp;as&nbsp;well as China and India plus travel a fair bit, so I have experienced a good number of cuisines and like them all. I&nbsp;eat mostly vegetarian and mostly do a lot of scratch cooking. I am known for my creative use of leftovers and whatever is in the fridge. Too bad those recipes can't go easily into Zaar.</p>
