Chili and Beans

"Walt Disney's home and heart were in the Southwest as evidenced by one of his favorite recipes. This is one of the Zaar recipes that I adopted. If I make any changes to the recipe, I'll post them."

  • Soak beans overnight in cold water.
  • Drain off water; put beans, onions and salt into a large kettle; add water to come 2 inches over beans.
  • Simmer about 4 hours, or until tender; add hot water if necessary, to maintain liquid level.
  • Meanwhile, prepare sauce.
  • Heat oil in a large deep skillet or Dutch oven; add garlic and ground beef; cook slowly until meat is lightly browned.
  • Add remaining ingredients; simmer 1 hour.
  • When beans are tender, add sauce to beef mixture and simmer for 30 minutes longer.
  • NOTE: For a very spicy chili, add a dash or red pepper flakes, coriander seeds, fennel seeds, cinnamon, cloves, ginger, turmeric and a small yellow Mexican chili pepper.

  1. I did make a few changes to this recipe, but the changes I made didn't really affect the taste too much. I used stew meat instead of ground beef and I added a few drops of pepper sauce, because it just didn't have the kick to it that I was wanting. We just prefer the stew meat for the chili, so I cut the meat up into very small pieces and used that. Great recipe.
