Chili Cheese Meatloaf

"This is a gift for all occasions, especially when there is a loss in someone's family. The gift can be eaten right away, cold or heated. It can frozen and warmed for another day. It is a little spicy but very comforting. It is a perfect gift for a neighbor at Christmas. There will be tons of cooking, cakes and pies but no one thinks of giving a meat loaf which could be used for another day. Especially during the preparation of the holiday season, when everyone is happy but tired and weary."

  • Preheat oven to 375 degrees Fahrenheit.
  • Spray Pam in large meat loaf pan; set aside.
  • In large mixing bowl add hamburger, beaten eggs, Rye bread pieces and evaporated milk. Mix well.
  • Add white wine vinegar, chili pepper, cumin and olives pieces. Mix.
  • Add neufchatel cheese pieces to meat mixture. Mix.
  • Put in loaf pan and pat down. Make sure the cheese pieces are not sticking up. Cover them so they are inside of the meat loaf.
  • Bake for 40 minutes or until sides come away from the loaf pan and top has risen.
  • Take out of oven and cool.
  • Wrapping: Place loaf in disposable foil loaf pan and cover with plastic wrap and bow.
  • Instructions on Card:

  1. Very good! Quick and easy to put together. I skipped the salt because the olives have enough sodium. Did add dried parsley and black pepper.   2. The theme of this Craze-E contest 2010 is GIFTS from Your Kitchen and you did a good job of mentioning this in your recipe (Chefs who did not, I just clicked on by.). Chili Chef, you also did a good job of incorporating some of the required contest ingredients listed, which sometimes is not an easy task. Overall it was a very good recipe and it can be used for serving a meatloaf on a plate with other vegetables or as an appetizer using the rye cocktail bread (see my photos). Further, I had a hard time finding the Neufchatel Cheese. That is, after Googling I assumed it would be in the gourmet cheese section of food markets. However, to my surprise it was in the regular dairy section next to the cream cheeses. Finally, if I had to make this recipe again I would consider using Cheddar Cheese and Italian bread crumbs as substitutes. Thanks for sharing this recipe with me and the other Craze-E contest Chefs.
