Chili Chicken With Caramelized Onions

- 1⁄2 cup chili sauce (sold at Mexican food stores)
- 16 ounces chicken breasts
- 1 medium yellow onion
directions
- Pour small amount of olive oil in pan on med heat.
- Cut chicken into small strips, and slice onions into 1/2 rings. Place over olive oil and coat with chili sauce.
- Cover until chicken is cooked through and onions are carmelized (about 10 min). Serve over rice.

When I got married in 2001, I was completely unfamiliar in the kitchen. I grew up eating food from restaurants and a home cooked meal about once or twice a month. I stumbled around blindly the first few years, and my hubby had to try many awful creations...such as burnt chicken that was raw inside and carmels made from corn oil (instead of corn syrup).
