- 1 1⁄2 lbs ground chuck or 1 1/2 lbs ground round
- 2 medium onions, sliced
- 1 (28 ounce) can whole tomatoes
- 1 (6 ounce) can tomato paste
- 1 cup water
- 1 beef bouillon cube
- 1 (16 ounce) can red kidney beans
- 2 tablespoons green peppers or 2 tablespoons red peppers, diced
- 2 garlic cloves, minced
- 2 teaspoons salt
- 2 teaspoons oregano
- 2 teaspoons chili powder or 2 teaspoons ground cumin
- 1⁄2 teaspoon crushed red pepper flakes (to taste)
- 1 bay leaf
directions
- Combine first 2 ingredients in Dutch oven. Brown meat; drain fat. Add remaining ingredients; stir to blend. Cover and simmer 1 1/2 hours, stirring occasionally. Remove bay leaf.
