Chili for 50!

"I concocted this one for a Lenten Series dinner at church in 2007. It is pretty basic, uses readily available ingredients, and minimal preparation time."

  • If necessary, split between 2 large stock pots, splitting ingredients as you add them.
  • Brown beef and sausage.
  • Add onion and garlic, saute until translucent.
  • Add tomato sauce, crushed tomatoes, chiles and spices.
  • Simmer at least 30-45 minutes.
  • Add kidney beans 15 minutes before finishing.
  • Serve hot, garnished with sour cream, chopped onions, hot sauce, or cheddar cheese.

  2. 42 oz. of kidney beans is listed twice. Is that an error? Or do you mean a different type of beans? Do you mean 84 oz. of one bean? Please clarify. Anxious to make this for a family renunion.

  1. This was a very good and easy to fix chili recipe. I added more beans to it and used tomato purée rather tomato sauce. Plus, I used a little over 6 lbs of ground beef. Everyone loved it. I'm not exactly sure how many we fed as I didn't count plates but it was in the range of 35 to 45.
     
  2. The chilli was great. I used black beans instead of kidney beans. But it would not have served 50. We served 35 people, 13 were children and we served it over noodles. I think it would have served maybe 25 with out the noodles. <br/><br/>Thanks so much for posting, I just wanted to share another preservative.
