  • Combine all ingredients and pour into a lightly oiled baking disk.
  • Bake in oven, uncovered at 350 degrees for 30 minutes.

  1. Quick and easy side dish for a Mexican meal! I like this better than "Spanish Rice" and I really liked the creamy texture, and tang of the cheddar. I think it could do with some jalapeño or something to give it a little kick, but over all, we really enjoyed this! Thanks Donna! :)
     
  2. Maybe I did something wrong, but this came out the consistency of cottage cheese and tasted terrible. I tried to add both ketchup and salsa and I still could not get a good flavor. Any suggestions?
     
  3. This is a great recipe, I served it tonight with <a href="/131176">Beef and Bean Burritos</a> and everyone in my family loved this meal. I have to confess that I didn't exactly make it low fat. I used extra sharp cheddar and low fat sour cream. I have this recipe already in my cookbook and will be giving a copy to my mother who really liked it and asked me for it. Thanks for a great recipe.
     
  4. I made this a day ahead and because of another person's review of a little dryness, I added one can of cream of celery soup to the rice. I also added a little cumin and chili powder and of course, extra cheese! So, the low fat version of this went right out the window. We loved this recipe and will make again.
     
  5. Thanks so much for this fast adding side dish, using leftover rice! It was still could have been a little more "wet" for my tastes, so next time I will try adding a little more cream, or maybe a little milk.
