ingredients
- 12 large tomatoes, peeled
- 6 large sweet onions
- 2 green peppers
- 2 red bell peppers
- 1 1⁄2 cups apple cider vinegar
- 1 tablspoon black pepper (carefully)
- 3 tablespoons kosher salt
directions
- Grind the tomatoes, peppers, and onion in a meat grinder.
- Put all the ingredients in a large canning pot.
- Bring to a boil and boil 20 minutes.
- Put in 8-1/2 pint jars and seal.

Unfortunately, this recipe had very little flavor for me. I did take the suggestion to add some sugar/cinnamon/cloves and that made it better. I also then added some cayenne to give it some punch.EDIT: 1/19/08 I opened a jar of this today and had on crackers. I must say the original flavors have increased--it's much more flavorful now--I'd now give it 4 stars.

This is a delicious recipe! I love that I can use it as is, as a salsa or savory chili sauce, or add some sugar and cinnamon and cloves and make a sweet chili sauce! Very good flavors. I used medium tomatoes, 1 green pepper, but only had about 1/2 of a red pepper. I used medium red onions and got about 3 1/2 pints. Thank you so much for posting Rose!
