Chili Shrimp Noodles

"This has a great bite to it and a refreshing flavour, perfect with a few nibbles with friends. Works with chicken too. Use less chili sauce if you don't want it too hot."

  • 1 tablespoon oil, for frying
  • 1 red chili pepper, chopped
  • 1 red pepper, deseeded and sliced
  • 5 ounces baby corn, sliced lengthways
  • 4 scallions, sliced finely
  • 2 tablespoons sweet chili sauce
  • 3 tablespoons soy sauce, mixed with a pinch of sugar
  • 10 ounces straight to wok noodles
  • 1 tablespoon chives, chopped
  • 1 tablespoon cilantro, chopped
  • 10 ounces raw shrimp, peeled

directions

  • Heat 1 tbsp oil in a wok or frying pan and cook the prawns for 1 minute. Remove.
  • Tip in the chili and pepper and cook for 2 minutes.
  • Add the scallions and corn and cook for 1 minute, then add the sweet chili sauce, soy sauce, noodles and about 7 tbs water.
  • Simmer for 2 minutes until the sauce is syrupy, then stir in the shrimp.
  • Scatter the chives and cilantro over.
