Directions

  1. In saucepan melt butter over medium. Add onion and sauté until softened. Add carrots and cardamom; sauté for 2 minutes.
  2. Add wine and ginger; cook until wine has evaporated, about 5 minutes. Add carrot juice, stock, salt and pepper; bring to a boil.
  3. Cover and reduce heat to low and simmer until carrots are tender, about 20 minutes.
  4. Process soup in batches until smooth. Transfer to a bowl and stir in lemon juice. Season to taste with salt and pepper.
  5. Cover and refrigerate until cold. Serve garnished with dill.
