STARTER
- 1 (600 g) bag Europe's Best Caribbean Treasure frozen fruit, defrosted
- 1 cup fruit juice (mango, apple, pineapple or orange)
- 2 tablespoons lemon juice or 2 tablespoons lime juice
- 1 tablespoon maple syrup or 1 tablespoon honey
SALSA
- 1 cup finely diced cucumber
- 2 tablespoons fresh dill, finely chopped (or cilantro or parsley)
- 1 tablespoon fresh jalapeno pepper
- 1 tablespoon lemon juice or 1 tablespoon lime juice
Directions
- STARTER: In a blender or food processor, purée fruit (in batches if necessary). Add fruit juice, lemon juice and maple syrup. Add extra juice if thinner consistency is desired. Transfer to pitcher or bowl. Cover and refrigerate for 2 hours.
- SALSA: In a bowl, combine cucumber, dill, pepper and lime juice.
- ASSEMBLY: Stir soup. Serve in chilled bowls, or glasses. Garnish with salsa.
- MAKE AHEAD: Soup can be prepared, covered and refrigerated up to one day ahead.
- TIPS: For an alternate garnish, top each serving with chilled yogurt or sour cream, fresh blueberries, and shredded fresh mint.
- The starter portion of the recipe can also be used as a dessert sauce.
- Recipe can also be halved.
