  • 3 cucumbers, peeled & seeded
  • 1 small onion, coarsely chopped
  • 12 bunch celery, trimmed, peeled & coarsely chopped
  • 12 lb frozen popcorn shrimp, thawed
  • 2 tablespoons butter
  • 12 teaspoon cajun seasoning
  • 12 teaspoon dill weed
  • 2 tablespoons butter, melted
  • 2 tablespoons flour
  • 4 cups half-and-half

  • Puree cucumbers, onion & celery individually in the bowl of a food processor. Combine all in a mixing bowl & set aside. Melt butter in stockpot. Add shrimp & stir to coat. Season with Cajun spice & dill weed. Whisk melted butter & flour together. Stir mixture into shrimp & cook over low heat for 1 minute. Slowly add half & half, stirring constantly. Add pureed mix & simmer over low heat for 20 minutes, stirring occasionally. Remove from heat & chill completely before serving.
