"This is a family tradition from my husbands family. Though it is called "Chip Salad" it is not a salad, but more like a layered tostada. For the best flavor, follow directions exactly. At least to us it is best just like this."

  • To Make Hot Dry Mix:'.
  • Crush oregano in package.
  • Crush Chili Tepin in package.
  • Add following ingredients to airtight container:I use a jar.:.
  • 1/2 Package crushed oregano.
  • 1 Bag crushed Chili Tepin.
  • 1 Tablespoon garlic powder.
  • 1 Tablespoon Salt.
  • Stir together and store in dry cool place.
  • To Make Hot Sauce:.
  • In blender add the can of Whole Peeled Tomatoes, 1/2 chopped onion,1 teaspoon salt, 4 peeled cloves of garlic, 3-4 tablespoons of water, and 1-2 tablespoons of dry chili mix. (Very hot mixture) Add more or less to taste.
  • Blend for 30 seconds.
  • Sort and wash Pinto beans.
  • Place in 8 quart Sauce pan, cover with water 1-2 inches above.Cover.
  • Let sit overnight.
  • In morning, drain water.
  • Cover beans with fresh water, 3 inches above beans.
  • Boil for 2 hours, stirring often or simmer for 4 hours, adding water as needed.
  • Season with salt to taste throughout cooking.
  • When beans are tender, mash with potato masher or anything you can use to mash.
  • Heat Lard in small frying pan till just smoking.
  • Add to beans, be careful, it will sizzle. Stir in 1/2 cup cold water. Cook 20 minute stirring often.
  • In large frying pan brown Ground Chuck. Add 1/2 chopped onion and small can of green chilies. Season with salt, pepper, garlic. to taste.
  • To Prepare Toppings:.
  • Shred lettuce.
  • Grate cheese.
  • Chop onion.
  • Chop Tomato.
  • Put each in it's own bowl.
  • To Assemble Salad:.
  • Break up Chips on plate.
  • Cover with layer of beans.
  • Add ground chuck.
  • Onion.
  • Lettuce.
  • Cheese.
  • Tomatoes.
  • Hot Sauce.

Probably my most famous dish is my chili beans. The best tasting ones I have ever had. I can brag like that because my recipe is not mine really, I got it from my mom. Everyone that trys it likes it and comes back for 2nds and 3rds. My favorite dish to cook is Chip Salad. I make my own hot sauce and I love the dish! It's kind of comfort food to me. My favorite restaurant is Macayo's here in Phoenix. It's been around since I was little and my parents went there once a week. They have the best Mexican food I've ever tasted. But I'm sure there are some better ones out there, it's just what I have had here.
