Chipotle-Black Bean Soup

"One of my favorites. I sometimes use four cans of black beans in place of the dried, and all chicken broth without the water. I also like to puree the whole batch with my hand blender, but that's just personal preference. This is a very forgiving soup, so just do what you like!"

  • To prepare soup, sort and wash beans; place in a large Dutch oven. Cover with water to 2 inches above beans; bring to a boil, and cook 2 minutes. Remove from heat; cover and let stand 1 hour. Drain.
  • Heat oil in a large Dutch oven over medium-high heat. Add onion; sauté 2 minutes or until tender. Add garlic; sauté 1 minute. Add beans, chipotle chile, 2 cups water, oregano, cumin, and broth; bring to a boil. Cover, reduce heat, and simmer 3 hours or until beans are soft.
  • Place 1 cup of soup in a blender; process until smooth. Return to pan. Stir in pepper and tomatoes; cook until thoroughly heated.
  • Ladle soup into each of 4 bowls; top with yogurt and cheese.

  1. Very good soup - I did use four cans of black beans which made for a very quick meal. Added some left over chopped cooked chicken for a nice meal on a cold winter night. Thanks for posting.
     
  2. This soup was excellent! I used canned black beans, spiced it up a little bit more (personal preference) and mashed some of the soup with a potato masher instead of using a blender. BF said this was delicious! Thanks for a great recipe :)
     
  3. Wow - a new fav in my cookbook! I too was forced to use canned chipotles (availability) but stole Rita's suggestion of using a bit of the sauce. Wonderful smokey undertone. Hearty and filling soup and easy to make. Will definitely make again.
     
  4. Surprisingly my kids loved this soup. I made it for my husband and I, and the kids polished it off. It is easy to make as well. I left out the cumin for personal preference but otherwise made as directed. Thanks for the recipe.
     
  5. I just Love chipotles! I did use canned chipotle in adobo sauce using some of the adobo sauce as well. Nice and smokie! I do have to admit I used canned beans for a quick meal! Using black and red beans. Added a diced orange bell pepper, celery, an extra garlic clove and red onion. topped with shredded cheese. Thanks for a smokin hearty meal!

I've since moved to the east coast to a small village in Northern Virginia - a huge change! We moved here mainly so we could live in an area better suited to raising children and closer to family. Although it's an adjustment, we really love it here. My husband and I were married in Feb 2003 and had our first daughter, Kylie, in Aug 2004. Our second daughter, Katie, was just born in July 2006. I was an HR Director until I became Mom, and I wouldn't trade this job for anything in the world! I began cooking when I became a stay-at-home-mom, mostly out of necessity. We used to eat out for every meal...and I do mean EVERY meal. When our income was cut in half after my "early retirement", eating out was no longer an option. Therefore, if I was going to continue to eat all the delicious food I was accustomed to, I was going to have to...oh, the horror!!!...COOK IT MYSELF!!! I had grown up baking with my mom, but hadn't actually baked in years and had always left the cooking to her. To my utter surprise and delight (not to mention my husband's SHOCK and delight)...I loved it!
