Chipotle Mexican Grill Braised Pork Shoulder

- 1 (6 lb) boneless pork shoulder
- 2 -3 tablespoons oil
- 1 onion
- 4 medium tomatoes
- 4 -6 cloves garlic
- 1⁄2 - 1 teaspoon cumin
- 2 -4 sprigs fresh oregano
- 2 whole cloves
- 2 bay leaves
- 2 dried chipotle chiles
- 3⁄4 cup water or 3/4 cup meat stock
- 1 teaspoon salt
- 1 teaspoon pepper
- 8 -12 flour tortillas
- 2 cups shredded lettuce
- 1⁄2 cup sour cream
- 2 cups grated cheese
- 1 cup salsa
- 2 tomatoes, chopped
- 1 cup black olives, chopped
directions
- Generously salt and pepper the pork shoulder.
- Let meat come to room temperature (2 hours) I would never, ever do this step, but some of you may feel comfortable.
- Preheat oven to 325*.
- Add olive oil to pan, sear pork.
- Let rest 10- 15 minutes.
- Drain excess oil from pan.
- Add remaining ingredients to pork.
- Cover and cook 2-3 hours until internal temperature reaches 140*- 150*.
- Let pork rest 10- 15 minutes before slicing.
- Fill flour tortillas with shredded pork, garnish with lettuce, sour cream, grated cheese, salsa, tomatos and black olives or garnish as desired.

My husband and I have 4 teenage daughters. He is so great--he keeps the 5 of us in balance..which isn't always the easiest job in the world!
My picture came about while I was in college a few years ago. I was going crazy with tons of homework but felt compelled to make the family breakfast. I wasn't paying any attention to what I was doing and when I looked down, the eggs were smiling up at me!
For some reason, I just love that picture and I don't really want to change it to a photo of myself.
Biggest pet peeve: Tangled hangars! You try to get just one hangar and 3 more will somehow twist themselves around the one you want!
I am very allergic to onions--I do not breathe them, eat them or touch them if I can help it.
Sometimes I feel like we are an onion obcessed society! Start looking at labels! You would be surprised at how many boxes and packages contain onion in some form.
That's okay....I make most things from scratch--which is probably better anyway.
