Chipotle Peach Glazed Chicken

  • Spray grill with cooking spray. Heat grill for direct heat.
  • In a small saucepan combine preserves, lime juice, chipotle pepper, and adobo sauce. Heat mixture over low heat, until preserves melt. Stir in cilantro and set aside.
  • In a small dish combine garlic, pepper, cumin, and salt. Sprinkle mixture over chicken.
  • Cover and grill chicken over medium heat 15-20 minutes, turning once or twice and brushing with preserve mixture last 3 minutes of grilling. Cook until juices of chicken are clear and when the centers of the thickest pieces are cut they are no longer pink.
  • Heat any remaining preserve mixture to boiling. Boil and stir 1 minutes and serve with chicken as desired.

  1. my husbands words were "this is yummy". I thought it was good too, I didn't grill it because of lack of time. I cooked it in a saucepan with the lid on...some of the glaze burned onto the pan and didn't stick to the chicken- so that was a bummer- I spooned the leftover sauce onto the chicken and that redeemed it. It was really moist and good. If my husband says "this is yummy" without any prompting from me then it must be a keeper. I think I will have to give it another try on the grill and see if that won't up my star rating. We both loved the heat and sweet together
     
  2. Um, this was pretty much the most amazing chicken of all time. I realized after the fact that I had used apricot preserves instead of peach (no sugar added kind). It was SO good. Everything else I followed exactly. I did let the chicken sit for about an hour in the fridge with the spice rub on it. Next time I might add MORE chipotle to kick the spice up even more. I don't know what else to say besides this recipe ROCKS!

Me and my boyfriend have been together for 11 years now. We live on 40 acres and have 6 dogs and 4 Tennessee Walkers. We both work a lot of hours so there is never enough time in a day to get everything done. I absolutely love the outdoors. I also enjoy lifting weights, reading and playing with all of my beautiful animals. I absolutely love, love and love to cook. I like to cook a variety of things and also like love to bake. I like to just get in the kitchen and experiment with different things. If something does not turn out for me such as pie crust or gravy I will keep trying until I can make it work. Only problem is, when I finally make it work it may not work again the time after that. It is fun though and I do consider myself a pretty good cook for the most part. I also love slow cooker recipes. Those are my most favorite in the winter months.
