Chipotle Tomato Salsa

25 8 ounce jars
ingredients
- 78.78 ml sugar
- 170.09 g tomato paste
- 3 large red bell peppers, 4 cups shredded
- 3-4 onions, 4 cups shredded
- 170.09 g chipotle chiles in adobo (minced removing seeds is optional)
- 1 bunch fresh basil, 1/2 cup chopped
- 1 bunch parsley, 1/2 cup chopped
- 1 lemon, juice
- 177.44 ml vinegar
- 1 bulb of garlic, minced
- 14.79-29.58 ml salt, to taste
- 3785.44 ml diced tomatoes, stems and cores removed
directions
- Place all in a large pot bringing to a boil then reduce and simmer for 20 minutes.
- Fill into hot sterile jars leaving 1/2 inch headspace removing any air bubbles.
- Being careful not to leave any salsa on the rims.
- Wipe jar rims with a clean, damp paper towel. Put on lids and screw on metal bands.
- Process for 10 minutes in a hot water bath.
- Label and store in a dark place. Use with 1 year.

Mmm, Rita, this sauce is AMAZING!!! It tastes spicy, without being too hot to handle and there also is tartness from the vinegar. The tomatoes, bell peppers and onion go so well together and the herbs add a wonderful distinct background flavour. All in all this is a perfect combination of flavours and just what you need to have in your pantry. It will kick up any meal and really make it special. I had it with rice today and plan on using it in many casseroles and pasta dishes to come. THANK YOU SO MUCH for sharing this gem from your kitchen with me! It will be treasured!

WooHoo, this stuff is hot, hot, hot! I love it. It has a beautiful color and a wonderful taste. I wasn't sure the Chipotle Peppers in Adobo would be hot enough, so I added two Jalapeno's. Yikes, I maybe should have only added one. I just love Garlic, so I added more garlic too. <br/>Can't wait for the family to try this salsa. Thanks for yet another fabulous recipe!
