  • In a 2-qt. heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted.
  • Add rice and lime juice, stir for one minute.
  • Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to a simmer over low heat until rice is tender and water is absorbed, about 25 minutes.
  • Fluff rice with a fork and stir in cilantro.

  1. Very easy and tasty recipe. Served with a Easy Crock Pot Chicken, Chickpea, and Apricot Tangine recipe #137530. I think this would be nice with so many things and uses simple things - not fussy but delicious.

  3. Very good rice recipe! We love Chipotle, this was close. I used brown rice for extra nutrition. We enjoyed it very much and will be using this one again.
     
  4. I followed Recipe and it was very sticky but great flavor. After letting it cool the rice was a lot less sticky and perfect reheated.
     
  5. This does taste like Chipotle's Rice! I had to sub Jasmine because my Basmati was hiding somewhere in my pantry. While it was cooking I found I needed to add additional water but that may be because I used a different rice. I served this with some Mexican food that I made and then had the leftovers with some Indian food that a friend had given me. It was still wonderful the next day!
