Chippy Peanut Butter Cookies

"This is a fabulous cookie recipe I found in TOH several years ago. I had written the recipe on a card and thought I had lost it, but it magically reappeared after cleaning out a drawer! I am posting it here for safe-keeping. For best results, use a high quality chocolate chip (like Ghirardelli) and a good peanut butter. I hope you enjoy these cookies as much as I do!"

  • preheat oven to 350.
  • cream butter, peanut butter and sugars.
  • add eggs, one at a time, beating well after each addition.
  • beat in vanilla.
  • combine flour, baking soda and salt; gradually add to creamed mixture.
  • stir in chips.
  • drop by rounded tablespoons onto cookie sheets.
  • bake at 350 for 12-15 mins.
  • cool for 2 mins before removing to wire racks.
