Chive and Parmesan Frittata Bites

- 8 large eggs
- fresh ground black pepper
- 1 ounce chives, snipped
- 1⁄2 ounce butter
- 1 ounce parmesan cheese, finely grated
directions
- Beat together the eggs, some seasoning and finely snipped fresh chives. Preheat the broiler to high.
- Melt the butter in a non-stick 7in frying pan. When the butter is foaming, add the egg mixture and cook gently for 8 minutes or until almost set. Sprinkle with the parmesan.
- Broil the frittata for 2-3 minutes until golden brown and set, then cut into diamonds and skewer with a toothpick.
- Serve hot.
