Directions

  1. Beat together the eggs, some seasoning and finely snipped fresh chives. Preheat the broiler to high.
  2. Melt the butter in a non-stick 7in frying pan. When the butter is foaming, add the egg mixture and cook gently for 8 minutes or until almost set. Sprinkle with the parmesan.
  3. Broil the frittata for 2-3 minutes until golden brown and set, then cut into diamonds and skewer with a toothpick.
  4. Serve hot.
