What a great way to make mashed potatoes. The flavor was great and I liked that I could cook the potatoes while having my meat cooking in another crock pot. I couldn't buy sour cream and chives chip dip so I made up my own. I served this with Crockpot Dry Rub Brisket #164653. What a great combination!

These turned out so flavorful! We made a few substitutions- my store doesn't carry IMO with chives anymore, so we used plain and added extra fresh chives. Also I used ranch dressing instead of the mix- I just poured a few tablespoons in with the half and half. I was careful to mix a little then see how dry they were before adding more dressing so I didn't get them to wet. They are easy to make and I love the fact I could cook, mash and mix them before company arrived and just leave them in the crockpot on warm. Thanks for sharing the recipe!
