  1. Pre-heat oven to 180 Celsius.
  2. Line flat oven trays with baking paper.
  3. Beat butter until soft.
  4. Add castor and brown sugars and beat until mixture is light and fluffy.
  5. Gradually add the egg and vanilla essence, beating until well combined.
  6. Sift the flour and fold into the mixture.
  7. Add the chocolate and stir well.
  8. Pinch off teaspoonfulls of the mixture and roll into small balls. Place evenly on trays, allowing for spreading.
  9. Bake for 15mins.
