Chockful of Nuts Brittle

ingredients
- 1⁄2 cup butter
- 1 cup white sugar
- 1⁄4 cup corn syrup
- 1 1⁄2 cups salted nuts (whatever kind you like)
directions
- Combine butter, sugar and corn syrop in a large saucepan.
- Using a wooden spoon, stir and cook over medium heat until smooth and bubbly.
- Cook, covered for one minute.
- Add nuts, increase heat to medium-high.
- Cook uncovered, stirring constantly until syrop is a warm golden color (about 5 minutes).
- Line a cookie sheet with foil and lightly butter.
- Pour mixture onto pan, spreading as thin as possible.
- Cool until hard (approximately 30 minutes).
- Peel from foil and break into bite-sized pieces.

This is the easiest recipe! I can't tell you how happy I am to know that I can finally make my own peanut brittle. I always thought it was so difficult for some reason. The only trouble I had was that either it doesn't take a whole 5 minutes or my idea of med-high is off kilter (probably the latter) because the sugar got a bit burnt. No reflection on the recipe, though. I just need to perfect my technique. Thanks for posting!

I am a full time stay-at-home mom of two kids, a girl who's 8 and a very busy 5 yr old son, who has just started Kindergarden and loving it.As am I, I'm starting to sense what freedom from the SAHM life is!!! I really enjoy attending births and assisting women during this amazing time.I have expanded on my doula work by working privately for a family post-partum, 2 days a week. This keeps me busy, but I know that this is not my forever job. However now that my kids are both in school, I have started to think about "what I want to be when I grow up!!"
