Chocolate Caramel Cake

  • 1 (18 1/2 ounce) package chocolate cake mix
  • 1 cup and 2 tablespoons sugar
  • 12 cup butter
  • 12 cup heavy whipping cream
  • 1 cup caramel sauce
  • 12 cup caramel, to garnish

directions

  • Make single-layer cake according to package directions. Remove cake from oven, let cool slightly, then pierce all over with a fork.
  • Heat caramel sauce in microwave for 1 minute. Pour caramel sauce over warm cake. Chill cake in fridge for half an hour.
  • For frosting, heat 2 T. sugar over medium heat until it dissolves and turns golden brown, set aside. Combine remaining sugar, butter, and cream in saucepan and cook on medium, stirring constantly until boiling. Add caramelized sugar and boil. Cook another 2 minutes, stirring constantly. Remove from heat and beat until desired consistency. Frost cooled cake and garnish with caramel pieces.

I am married, with no children. We wish that was different but I guess it wasn't meant to be, We do have an adorable rescue dog, an adult Shitzu-Poodle mix. We also get to spend time with our nieces and nephews (when they're not too busy haha!) My husband is a great guy, I can't imagine life without him. He works works very long hours. He is the best guinea pig, he enjoys trying all the recipes I make and loves leftovers. I am a self-taught cook, my mother wouldn't let us in the kitchen while she was cooking when I was growing up...it was her domain. I enjoy making people happy with the foods I have prepared for them.
