Chocolate Chip Banana Nut Bread

"A recipe (originally by Ann Tremont) my mother put in a cookbook that I have modified quite a bit. Every time I bring this to work, everyone wants a piece (and there's not enough to go around)."

  • Hand mix flour, baking powder, baking soda, sugar, walnuts, chocolate chips, and vanilla extract in mixing bowl until chocolate chips and walnuts are evenly spread out throughout mixture.
  • In another bowl, mash bananas and add to the main mixing bowl.
  • Soften the butter (I microwave for 20 seconds) and add to the main mixing bowl.
  • Add two whole eggs to main mixing bowl.
  • Mix all ingredients together by hand until it has a batter-like consistency.
  • Pour into greased loaf pan.
  • Let mixture set for at least 20 minutes before baking (Preheat the oven to 325°F).
  • Bake at 325°F for 65 minutes (may take longer depending on the oven and altitude).
  • When finished baking, it is best to let it set overnight before serving.

  • An optional recipe: Instead of the chocolate chips, use 1 1/2 tsp of cinnamon to make Cinnamon Banana Nut Bread.

  1. I made this last night and it is very good banana bread! This makes a large loaf that bakes up high to a rich golden brown. Perfect!! It took mine about 65-70 minutes. I let it cool for about 1/2 hour before slicing into it and it was so good still warm and fresh from the oven. I refrigerated it overnight and had another piece of it today and it's just as good the next day. I think 1/2 cup of sugar is plenty. I may even cut it down slighty next time because between the choc. chips and the banana it's plenty sweet for my tastes. Delicious! I will definately make this one again. Thank's for sharing!!
     
  2. Excellent! Very moist. Was intrigued by the instructions to let the batter set before baking it. I definitely think it made for a higher, lighter banana bread. Kids thought it was great.
     
  3. I made this for my family. It is very easy to make and tastes wonderful. My husband who does not like banana bread loves this one. I am highly allergic to nuts so I used unsalted sunflower seeds instead of walnuts. They are so small you do not have to dice them and my husband said they taste just like regular nuts in the bread. I did not have a bread pan so I used my bundt pan and it works perfectly. If you want a little extra chocolate on it soften up some Chocolate icing (microwave in a bowl for 10 seconds or less) and lightly drizzle it over the bread or use a regular glaze. I think it's sweet enough without the glaze but sometimes my kids like a little extra for a treat.
     
  4. I've made this bread many times now, and each time it comes out better than the last. I combine it differently than instructed, however, and have found that beating the sugar with the softened butter then beating in the eggs works very well. I add the vanilla at that time too. I then sift in all the dry ingredients, folding it into the egg, butter & sugar mixture, then adding the mashed bananas, nuts and chocolate chips. I also like to top the bread with baker-cut ginger chips (the company, Ginger People, sells these tiny bits of ginger). It makes for a sweet/tangy crusty topping. All in all, I just love this recipe!

Tweaks

  1. I use this delicious recipe a couple times a month. My wife asked me to make it using whole wheat flour. So here are the tweaks that worked amazingly well. Substitute a quality whole wheat flour for regular flour. Add one quarter cup water. Increase the amount of baking powder and vanilla to 2 teaspoonful each. I use whole walnuts and regular size semi-sweet chocolate morsels. I allow the bananas to become over-ripe so that they have a slightly fermented odor. Keep an extra over-ripe banana handy as needed to replace any unusable parts of the three bananas. This recipe works better when stirred by hand and when the batter stands in its bakeware for at least 30 minutes prior to baking. It will likely take up to 15 minutes longer to bake. Thanks to the contributor for the original recipe! It is fantastic!
