  • Mix bananas, oil and eggs in a separate bowl with a whisk, then add to cake mix, combine with a rubber spatula.
  • Stir in nuts and walnuts.
  • Makes 12 large muffins. Sprinkle with coconut on each, it will toast when baking -- and bake for 20 to 25 minutes at 400 degrees°F.

  1. Delicious! I'm not a huge fan of bananas, but the coconut and chocolate make the banana flavor not so strong. Made 12 HUGE muffins.

  3. These were a hit at our house. They were easy, fast, and tasty. My husband who isn't a muffin fan, loved these right out of the oven. I skipped the nuts and threw in an extra 1/2 c. mini choc chips. I made 23 small (cupcake size) muffins. Very good, thanks!
     
  4. This makes nice big muffins and I got exactly 12. I have now made several variations of this even though the recipe as stated is wonderful.I always use the cake mix, banana, egg and olive oil but have tried different flavoured cake mixes and different add ins with excellent results. Lemon cake mix and dried cranberries is one of our favorites, as well as orange cake mix with blueberries. I always make this recipe to use up old bananas and they really don't seem to stand out as a flavor.
     
  5. These are great!I didnt have bananas so just made them with the rest of ingredients.I used 2 microwave muffin pans and did them in 1000wt.Microwave,one pan I filled1/2 took 3mins.,other pan I filled almost to top took 4min.They are lucious and everyone raved over them thanks for posting.

  1. These are HUGE gloriously beautiful bakery like muffins and. They were delicious and incredibly easy to whip together. I used pecans in place of the walnuts. I also was unable to find French Vanilla Flavor cake mix, so I used yellow cake mix and added some vanilla.
