  • Preheat oven to 350. Line a 13x9 pan with parchment paper.
  • Beat first seven ingredients until creamy (butter through vanilla).
  • In a separate bowl, mix the remaining ingredients except chocolate chips and coconut (oats through salt).
  • Add dry ingredients to wet ingredients and mix thoroughly. Stir in by hand the chocolate chips and coconut.
  • Add batter to pan and spread evenly.
  • Bake for 20 minutes or until light gold on top.
