Chocolate Chip Tofookie

  • Preheat oven to 375°F.
  • In a medium bowl, mix flour, baking powder and salt. Set aside.
  • In a separate large mixing bowl, beat together margarine and shortening with mixer until creamy and smooth.
  • Add vanilla and brown sugar, and beat until smooth.
  • Add whipped tofu and beat until well-blended.
  • Continue beating while adding flour mixture until a big ball of smooth batter forms.
  • Mix in chocolate chips with a wooden spoon.
  • Drop batter with a tablespoon onto cookie sheet, about two inches apart.
  • Bake 8-10 minutes until cookies begin to brown lightly.
  • Cool on cookie sheet 5 minutes before moving to cooling rack.
