Directions

  1. Preheat oven to 375F.
  2. In a large mixing bowl, cream butter.
  3. Slowly add in the powdered sugar and mix.
  4. Beat in the egg yolk and vanilla.
  5. In a medium bowl, whisk together flour, cornstarch and salt.
  6. Slowly add flour mixture to the butter mixture, blend well.
  7. Stir in the coconut and chocolate chips.
  8. Shape dough into 1 inch balls and place on ungreased cookie sheet.
  9. Slightly flatten with bottom of a glass dipped in sugar.
  10. Bake for 10 minutes.
  11. Let cool 5 minutes before removing to wire racks to cool completely.
