ingredients
- 1⁄2 cup soft butter
- 3⁄4 cup powdered sugar
- 1 tablespoon vanilla
- 1 ounce unsweetened chocolate square, melted
- 1 1⁄2 cups flour
- 1⁄8 teaspoon salt
- 1 -2 tablespoon heavy cream
- 50 maraschino cherries, drained

Optional frosting
- 1 cup powdered sugar
- 1⁄4 cup heavy cream or 1/4 cup cherry juice
- 1 teaspoon vanilla
- 1 ounce unsweetened chocolate square, melted
directions
- Drain cherries and place on paper towel to dry well. Preheat oven to 350 degrees. Mix butter, sugar, vanilla and chocolate thoroughly. Blend in flour and salt alternately with the heavy cream until dough is formed.
- Roll teaspoon of dough into ball. Indent ball with thumb and wrap dough around a cherry, making sure there are no holes in the dough. Place one inch apart on ungreased cookies sheet or stone. Bake 12-15 minutes. Cool. Dip in icing or sprinkle with powdered sugar.
- For frosting: combine frosting ingredients above and dip cooled cookie tops into frosting.

This recipe is why I chose JeanieK for the Fall PAC 2009. I've had this sitting in my cookbook for months wanting to try these for Christmas. My MIL and my dad love chocolate covered cherries. I thought this would be something they would like. So I made a test run by doing half a recipe. And then I took half of those cherries and soaked them in rum for 24 hours. To tell the adult version from the kid safe ones I sprinkled red sugar on the frosting for the kids. My sugar was fine so it didn't stand out but it did give them a pretty little sparkle. I don't like cherries but I decided that I should try these before giving them to my test subjects. I liked the plain cherry to my surprise but I didn't like the rum soaked ones. My test subjects on the other hand had no problem with either. I will be making these for the holidays. Thanks JeanieK!
