“I wanted a crisp chocolate cookie without the chips and nuts; so after scouring the internet and not finding any, I made up my own. I also added almond extract because i wanted the nut flavor; but I believe that vanilla extract would be great as well as an orange extract. So if anyone tries this I hope you like it; my son and I certainly did”

Ingredients Nutrition

  • 1 cup unsalted butter, room temp
  • 1 -1 12 cup caster sugar
  • 3 tablespoons unsweetened dutch cocoa
  • 2 tablespoons almond extract (can sub vanilla or orange extract)
  • 14 teaspoon baking powder
  • 1 large egg
  • 14 teaspoon salt
  • 1 12 cups flour
  • nuts (they should be finely ground and roasted beforehand, the oils in them would weigh the cookie down) (optional)

Directions

  1. cream the butter and sugar until light and fluffy; I added each ingredient into this mixture and blended well; i added the flour by the 1/2 cup because i wanted to make sure it was well blended. the mix should be light and fluffy when done.
