Directions

  1. Put chocolate and butter in a heatproof bowl and place over a pan of simmering water, remembering not to let the water touch the bottom of the bowl.
  2. Stir occasionally till both are melted, add the egg and beat well.
  3. Remove the bowl from the saucepan and stir in the icing sugar, beat till smooth and glossy.
  4. Pour immediately over the cake for a smooth finish, or leave to cool for a thicker spreading/piping consistency.
