Chocolate Granola (Grain Free With Oatmeal Option)

"This is not my recipe, but I forgot what blog it came from!!! I took the original (which was Granola Bites) and changed it a bit and it turned out really yummy. See note about oatmeal substitution."

  • 12 cup pumpkin seeds
  • 34 cup sunflower seeds (raw)
  • 1 12 cups coconut flakes
  • 1 cup sliced almonds
  • 1 12 cups pecans, roughly chopped
  • 1 cup almond meal
  • 14 cup cocoa
  • 12 cup melted coconut oil
  • 14 cup vegetable glycerin (food grade)
  • 25 drops chocolate-flavored liquid stevia
  • 1 tablespoon vanilla
  • cinnamon (optional)

  • Preheat oven to 325°F.
  • In a large bowl, combine all the dry ingredients.
  • In a separate bowl, combine all the wet ingredients; combine the wet and dry ingredients, mixing really well to coat.
  • On a baking sheet lined with parchment paper, spread the granola evenly. Bake for 20-30 minutes, stirring half way through.
  • Remove from oven and let cool; store in an airtight container.
  • NOTE: You can sub up to 1-1/2 cups of oats for any of the nuts or seeds. That makes it not grain free then.

I am a Christian wife and mother of 3 kids. Since my DH's high cholesterol, we've been eating better. I never used to like cooking. Since eating better, I've liked learning and preparing new recipes. My kids haven't reconciled themselves to the new eating yet. I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
