Chocolate Haupia (Coconut) Pie

- 1 prepared 9 inch pie shell
- 1 (14 ounce) can coconut milk
- 1 cup sugar
- 1 cup whole milk (but you can us skim or low fat)
- 1⁄2 cup cornstarch
- 1 cup water
- 7 ounces semisweet chocolate
- 1 1⁄2 cups heavy whipping cream
- 1⁄4 cup sugar
- chocolate shavings, for garnish
directions
- Preheat oven to 350 degrees F (175 degrees C).
- Bake crust for 15 minutes, or until golden brown.
- Set aside to cool.
- In a medium saucepan, whisk together milk, coconut milk and 1 cup sugar.
- In a separate bowl, dissolve the cornstarch in water.
- Bring coconut mixture to a boil.
- Reduce to simmer and slowly whisk in the cornstarch.
- Continue stirring mixture over low heat until thickened.
- In a small sauce pan, melt chocolate chips for 1 minute or until melted.
- Reserve 1/2 of the coconut mixture.
- Mix remaining half with the melted chocolate and pour in bottom of pie crust; pour reserved half on top of chocolate layer.
- Cover and refrigerate for about an hour.
- Whip cream with 1/4 cup sugar until stiff peaks form.
- Layer the cream on pie; if desired garnish with chocolate shavings.
- *Bestif it refrigerates over night to completely firm.

Hi Guys, I had a bit of a fail with my first go but I am keen to try it again The mixture did not really set as well as I planned and was very runny, so I have a few more questions 1. Should I add more corn flour? 2. How long should the mixture boil for? 3. How long should the mixture simmer for? Thanks, Nick

I was lucky enough to have some of the best Chocolate Haupia Pie at Ted's bakery in Oahu when visiting my son. This recipe is amazing and it would be hard to tell the difference between the two if them. Thus will be our 2nd time using this recipe. The first time we topped iy with toasted shredded coconut and shaved chocolate. My daughter had a choice of any cake for her birthday - she chose this pie! SUGGESTIONS: use a deep dish pie crust or two regular. We hope to try different chocolates for future pies!

My roommate is from Honolulu and is missing home (understandable, since we're in the frigid Midwest!). She wanted haupia pie for her birthday, so I figured I'd give it a try.<br/><br/>IMPORTANT: The best ways to ensure success:<br/>1. If you're making homemade pie crust and you're going to blind bake it, let your crust hang over the edges, trimming with a kitchen shears instead of a knife works really well. Also, letting the crust sit in the freezer for an hour or two can help minimize shrink, and use pie weights if you have them!<br/><br/>2. FOR THE HAUPIA: Make a slurry of the cornstarch and 3/4 cup of your COLD liquid from the filling (coconut milk and milk) in a pyrex glass measuring cup. Mix it until there are NO lumps, then pour that in with a thin stream. I made the mistake of putting the corn starch in directly like the recipe said, and it was an utter disaster. No no no no.<br/><br/>I garnished with toasted coconut and shaved chocolate. It looked very pretty, not the flavor/texture for me, but my roommate thought it as great.

I made this pie on a macadamia nut crust, which I would highly recommend if you like mac nuts. I cut back the sugar in the haupia to 1/2 cup. The chocolate layer is too rich with semi-sweet chips for me, so I made it a second time with milk chocolate and liked it much better. Milk chocolate chips didn't melt very well in a saucepan, but once I added the hot haupia mixture to it, the chips melt and it smooths out. Tastes just like local Hawaiian bakery bought chocolate haupia pie.
