directions

  • Line cookie sheets with parchment and set aside.
  • In a large bowl, beat butter, sugar, egg, and vanilla until well mixed, approximately 2 minutes.
  • IN a separate bowl, sift flour, and salt, and blend into butter mixture.
  • Stir in chips by hand.
  • Shape dough into logs about 2 inches long, and 3/4 inches wide.
  • Place on parchment lined cookie sheets and bake at 350 degrees for 15 minutes.
  • Remove pans from oven and place on wire racks, allowing logs to cool completely on the cookie sheets.
  • To prepare coating:

  • Melt chocolate chips and butter in microwaveor double boiler stirring every 15-20 seconds until smooth.
  • If mixture seems too thick, add more melted butter, and stir until smooth.
  • Put ground nuts on a paper plate or small bowl.
  • Dip logs 3/4 way into chocolate, scraping the excess from the back(flat side) of the cookie onto the side of the cup or bowl.
  • Roll or dip the coated log in the nuts.
  • Place on waxed paper to set.
  • Store logs covered in a single layer.

Reviews

  1. These were great and something different! Reading the other chef's review I used a small amount of almond extract too and used ground almond in the coating instead of walnuts.

  2. I really liked these. The 2nd time around I skipped making the coating and just melted some candy melts I had. I also used only 1 tsp vanilla and added 1/2 tsp almond flavoring just for fun. I'm also going to try freezing the baked cookies for make ahead convenience. Thanks a bunch!
