  1. Preheat oven to 300 degrees.
  2. Grease three cookies sheets and dust with cocoa powder.
  3. Melt the chocolate square and set aside to cool.
  4. Beat the egg whites with salt until soft peaks form.
  5. Add sugar slowly and beat until mixture very stiff and shiny.
  6. Fold in vanilla, melted chocolate, and the 1 tbsp cocoa powder.
  7. Drop by heaping teaspoonfulls (2 inches apart) onto prepared cookie sheets.
  8. They will have the shape of chocolate kisses.
  9. Bake 30 to 40 minutes.
  10. Remove cookies from sheets immediately.
  11. Cool completely and store in an airtight container.
