Chocolate Mint Cookies

  • Mix in a sauce pan -- brown sugar, butter & water until melted, add chocolate chips and melt.
  • Once melted, remove from heat & cool in a mixing bowl (about 10 min.).
  • Beat eggs, 1 at a time, into mixture.
  • Separately, mix together flour & baking soda.
  • Gradually add the dry ingredients to melted mixture.
  • Cover & chill for 1 hour.
  • Preheat oven to 350 degrees.
  • Shape dough into balls, bake on tinfoiled pan/parchment paper for 12-13 minutes or until they look puffy and cracked.
  • Immediately put 1/2 one Andes mint on top of cooked cookie, before it has totally cooled.
  • Once the mint melts, swirl around on cookie.
