  • Preheat oven to 350 degrees F.
  • Cookies: Combine brown sugar, butter and water in large, heavy-duty saucepan.
  • Cook over med heat, stirring occasionally, until butter is melted.
  • Add chocolate bits; cook, stirring for 1 to 2 minutes or until smooth.
  • Remove from heat and cool.
  • Add eggs one at a time, beating well after each addition.
  • Stir in flour, baking soda and salt.
  • Drop by rounded teaspoon onto ungreased baking sheets.
  • Bake for 6 to 8 minutes or until edges are set.
  • Cool on baking sheets for 1 minute;.
  • Remove unto wire racks& cool.
  • Filling: Beat confectioners sugar, 1/3 cup butter and mint extract in large mixer bowl.
  • Add milk until smooth and of desired spreading consistency.
  • Spread about 2 teaspoons filling onto flat side of 1 cookie; top with second cookie, flat side down.
  • Squeeze together gently.

  1. Super simple to make--the cookie itself is soft, chewy and oh so chocolately! I love the mint filling--it's so refreshing! I made a whole batch of the dough and usually roll them into balls and stick them into a freezer proof container so I can bake cookies in small batches. I refrigerate the filling and bring it to room temperature after baking a small batch. This is a keeper, thanks so much for sharing!
     
  2. These were good. ALL my kids liked them. They are a little greasy. I needed way more than 4 to 6 drops of peppermint, closer to 12 to 16. Doesn't hurt if you slightly overcook them. very yummy!!

  4. These cookies are so yummy and easy to make!! I tried putting mini chocolate chips in the batter, but they melted right away :-( At least they were chocolatey. We actually felt that the filling took away from the cookie, but it was good, we just preferred the cookies without it. After I melted the chocolate into the butter and sugar, the mixture was very grainy. But once I whisked in the eggs, the batter was very smooth! These cookies do not expand much so they can be packed on. However, as the dough cools, it becomes flakey and more difficult to shape. Still, a great recipe!
     
  5. Hi Aroostook This was a great inspirational recipe for me. I love mint, but I can't eat fillings like your recipe makes. So I made the cookie part using mint flavoring in the cookie. VEry good. Also I used WheyLow instead of sugar (developed for diabetics) and Smart Balance for butter. Thank you Judy in WA

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
