Chocolate Oatmeal Blitz Bars

"Mmmm...these use some of my favorite flavors...chocolate, cream cheese, oatmeal and nuts. Leave out the nuts, if you prefer!"

  • Combine cream cheese, margarine and sugars, mixing well until blended.
  • Blend in egg and vanilla.
  • Add combined dry ingredients; mix well.
  • Stir in chocolate pieces and nuts.
  • Spread into a greased (or sprayed) 13" x 9" pan.
  • Bake at 350* for 30 minutes.
  • Cool; cut into bars.
  • Top with powdered sugar or ribbons of frosting, if desired.

  1. We enjoyed these. I doubled the recipe and made it in a huge pan in order to be able to freeze them for lunches. They are a bit crumbly and sometimes fell apart. But they had lovely flavor. Thanks.
     
  2. These were wonderful!! I made them last night and brought them to work this morning and they were gone in no time. I am going to double this recipe the next time I make it and bake in my big bar pan for the Booster Club concession stand. Thanks for the great recipe.
     
  3. Phenomenal.....very different from any bars I've tried. They bake up into a cakey texture, but absolutely melt in your mouth. I used semi-sweet chocolate chunks, but I think just about anything would work in these. A guaranteed hit at any party or bake sale! Very easy to make!

I am... ~a mother of 2 kids (19 and 22) who are extremely picky eaters. The mere mention of "healthy" sends them running in the opposite direction. They prefer the creamy, cheesy, fried stuff that they weren't brought up on! ~a wife of a wonderful man who fights an expanding waistline and will lovingly eat most anything I set before him. Everything is 5 stars to him. :) He's the easiest customer a cook could ask for! ~a teacher who tends to reach for comfort foods to relieve stress. I am a middle school reading specialist. The miracles I see on a daily basis keeps me going! But it's also stressful, so keep me away from the cookie jar! I really have to fight off the sugary, fat-laden stuff that has no worth beyond the momentary comfort in my mouth. ~and I'm also a daughter who was brought up on home cooked meals back when calories meant nothing and taste was everything! That is an idea built into my system that's hard to shake! My mother raised 8 kids (I'm #7) on her home-cooking and I always teased her that she didn't raise a single skinny kid! I luckily inherited her great love of cooking and baking. (I miss you Mom!) ~finally, I'm "mom" to the best Bichon in the world. He is Quincy, our kid in a dogsuit.
