Chocolate Oatmeal No-Bake Cookies

"This is a recipe my mother-in-law gave me...she just throws stuff together, so this is the closest she could give me on measurements. Prep time is mixing ingredients & bringing to a boil...cooking time is my guess on cooling time."

  • Bring first 5 ingredients to a boil & remove from heat.
  • Add oats & peanut butter.
  • Drop by spoonfuls onto wax paper & let cool.

  1. I love this recipe! I make it about 3 times a week for my boyfriend's lunches. I haven't modified anything in it (and it comes out great!), but seeing ideas like rice crispies has me thinking! A must have for the recipe book!
     
  2. I have cooked and eaten this recipe since childhood. I live in hot humid Louisiana and in the summers I never use the big gas oven. This recipe is the easiest sweet that I know how to cook, and nowadays I usually do it in the microwave. I am another who does not measure when I cook, but this looks like the ratio that I use, except that I used double that amount of cocoa powder, and I don't used the vanilla. The only other difference is that I continue to cook for a minute or so after I add the oats. But it is a recipe that is easy to modify all sorts of ways, and I often use cold cereal like Rice Crispies or CherriO's instead of oats. In that case, remove from heat before adding the cereal. I often use the no-bake with RiceCrispies as the first layer and then add a layer of marshmallow crispy treats.

  5. I'm not sure how to rate these, because I've never had no-bake cookies before, and wasn't sure what to expect. I really like the flavor, but not the texture. I used rolled oats so that may be the problem, I think quick oats would have worked better. Also, after mixing the oats an PB in, the mixture was really wet.Too wet to hold any shape. I thought it might set up, but it didn't so I add two cups of rice krispies and that did the trick. Lastly, I used 11/2 C sugar and still thought they were a little too sweet. I love that the recipe doesn't call for a lot of butter. I'm glad I tried these, they were fun and different to make. Thanks for posting the recipe.

My name is Jessica & I'm 29. I am a Christian, SAHM, and am married to my wonderful husband Greg. We have a few different home based businesses we do on the side. I have a daughter Trinity - 7, two step daughters Kylie - 5, Kara - 4, and a son Grayson - born the end of December. Kids are back to school, and I am enjoying the break...if you could call it that! My time is now tied up by caring for my son, shuttling kids to and from school, soccer practice, church, bible study, etc. I am also learning to play the bass guitar. I love to cook...just not clean. (I'm VERY messy in the kitchen...could use every dish in the kitchen to make a bowl of oatmeal.) =)
