  1. Preheat oven to 350 degrees.
  2. Grease and flour a 9x5 inch loaf pan.
  3. Cream butter and sugar until light and fluffy.
  4. Beat eggs in one at a time until well blended.
  5. Stir in buttermilk and orange juice.
  6. Combine the all-purpose and oat flour, cocoa powder,baking powder, baking soda, salt, and cinnamon; add zest into flour mixture and coat it well.
  7. Fold the dry ingredients to the wet ingredients; do NOT overmix.
  8. Transfer the batter into the prepared pan and tap the pan gently (a few times) on the counter top to burst air bubbles.
  9. Bake at 350 degrees, and then reduce the heat down to 325 degrees after 10 mins (this is to prevent bread from severe cracking). Bake for another 30-40 mins or until the bread tests done. NOTE: To prevent bread from having a hard and burnt top, I usually cover the pan with foil immediately after the halfway mark. This will result in a tender and soft loaf.
  10. When bread is done, cool in pan for 10-15 mins; cool completely on wired rack before serving.
