ingredients
- 2 tablespoons cornmeal
- 1 tablespoon unsweetened baking cocoa
- 1 cup water or 1 cup skim milk
- sugar (to taste) or sugar substitute (to taste)
directions
- Whisk cornmeal and cocoa in a bowl with water.
- Microwave on high for 3 minutes stirring every minute.
- Let cool for five minutes.
- Enjoy!

I just couldn't get over the texture of this and I don't think the polenta went at all well with the chocolate. If you add a good deal of sugar and eat it quickly you can almost fool yourself into thinking you're eating something like cream of wheat with brown sugar, but in the end, I had to dump most of it.

I didn't have any exploding issues, but I do have to tell you to definitely follow the directions and stir this every minute. (I tried it once without stirring and it was a mess!) I used low fat skim milk as my liquid and sprinkled some splenda over the top. This made it a 2 point chocolate breakfast (on WW) which I enjoyed. This will come out of the microwave liquidy, but gets firmer as it sits. Thanks for a great one to try!

<p>Hi there! My name is Ashley and sad to say I am suffering from an eating disorder aka Anorexia. So you will find that most of my recipes aren't very fattening but I try to make the as tasty as possible. I am trying to get better and I find that my faith in Jesus Christ helps me in all situations. <br /><br />An update 8 years later. I have completely overcome my eating disorder. I am now a mother of two little girls and love them to death! It is almost embarassing to look back at the recipes because I no longer worry about eating low-calorie and these recipes just look gross, lol.<br /> <br />Update: I am happily married now and I am doing much better with my eating disorder now thanks to him!</p>
